Guest Cheesemaker REsidencies

I am hoping to find farms, creameries, and communities who would like to host me for week or month long residencies. I would want to stay onsite and offer my skills as a cheesemaker in exchange for a place to stay, access to food, and a modest stipend. I want to learn as well as offer advice, while participating in milking, general animal and farm work, cheesemaking, and affinage.

Single day speaking events

I am seeking to share my experiences and knowledge with chefs, farmers, fermenters, children, and other groups. Please contact me if you are interested in having me speak to a group, and share my story in person.

I could focus on the following topics:

  • Based on research for my DZTA scholarship, I can explain how rennet and thistle coagulants are made, and how they impact cheese flavor/texture.

  • Raw milk microbiology, food safety based on microbial richness, and a less industrial paradigm of milk fermentation.

  • Dairy focused grazing systems, their role in ecology, and practical examples of animal husbandry from various cultures.

  • A discussion of various approaches to cheesemaking, fitting a specific climate and culture. Examples from various continents and ethnic groups.

Goat walking

I wish to join people who take their livestock on long walks in wilderness regions, preferably with lactating animals. I want to learn wilderness skills, and experiment with making fermented milk foods in this context. I love to walk and work with livestock while roughing it, and can carry a load.
